Ingredients:

  • Mixed Vegetables (carrots, beans, potatoes, peas): 3 cups, chopped
  • Coconut Milk: 1 cup

  • Mustard Seeds: 1 teaspoon
  • Cumin Seeds: 1 teaspoon
  • Ginger: 1-inch piece, finely chopped
  • Green Chilies: 2, slit
  • Curry Leaves: 8-10

  • Salt: to taste
  • Fresh Coriander Leaves: for garnish

Procedure:

  1. Cooking the Vegetables:
    • Heat oil in a large pot. Add mustard seeds and let them crackle.
    • Add cumin seeds, ginger, green chilies, and curry leaves. Sauté for a minute.
    • Add chopped mixed vegetables along with KLW Stew Masala. Sauté for 2-3 minutes.
  2. Simmering:
    • Pour in coconut milk and add salt. Bring to a boil, then reduce heat.
    • Cover and simmer for 15-20 minutes until the vegetables are tender.
  3. Garnishing and Serving:
    • Garnish with fresh coriander leaves.
    • Serve hot with rice or appam.
