Seekh Kebabs (Veg)

Soya Seekh Kabab is a flavourful vegetarian kebab made from soya chunks, potatoes, chana flour/besan, shaped onto skewers and grilled to perfection.

Ingredients:

  • Soya Chunks: 1 cup
  • Potatoes: 2 medium, boiled and mashed
  • Green Peas: 1/2 cup, boiled
  • Onion: 1 medium, finely chopped
  • Ginger-Garlic Paste: 1 tablespoon
  • Green Chilies: 2, finely chopped
  • Fresh Coriander Leaves: 1/4 cup, finely chopped
  • KLW Seekh Kebab Masala: 1-2 tablespoon
  • Salt: to taste
  • Besan (Gram Flour): 2 tablespoons (for binding)
  • Lemon Juice: 1 tablespoon (for tanginess)
  • Oil: for greasing

Procedure:

  1. Preparing the Soya Chunks:
    • Boil water in a pan and add the soya chunks. Cook for 5-7 minutes until soft. Drain and cool.
    • Squeeze out excess water and finely chop or pulse in a food processor until coarsely ground.
  2. Preparing the Mixture:
    • In a large mixing bowl, combine the chopped soya, boiled and mashed potatoes, boiled green peas, onion, ginger-garlic paste, green chilies, coriander leaves, mint leaves, KLW Seekh Kebab masala and salt as per taste.
    • Add besan or chana flour for binding. If the mixture is too wet, adjust with more besan or bread crumbs until it holds together well.
  3. Forming Kebabs:
    • Take a portion of the mixture and shape it around a skewer, pressing firmly to ensure it adheres. Aim for even thickness for uniform cooking.
  4. Cooking the Kebabs:
    • Preheat your grill or oven to 200°C (400°F). Lightly grease the kebabs with oil to prevent sticking.
    • Cook for about 15-20 minutes, turning occasionally until the kebabs are golden brown and slightly charred.
  5. Serving:
    • Once cooked, remove the kebabs from the skewers and serve hot.
    • Garnish with lemon wedges and fresh coriander leaves. Serve with mint chutney or yogurt dip for added flavor.

Ingredients:

  • Minced Meat (Lamb/Beef/Chicken): 500 grams
  • Onion: 1 large, finely chopped
  • Ginger-Garlic Paste: 1 tablespoon
  • Green Chilies: 2, finely chopped
  • KLW Seekh Kebab Masala: 1-2 tablespoons
  • Fresh Mint Leaves: 1/4 cup, chopped
  • Salt: to taste
  • Oil: for brushing

Procedure:

  1. Mixing Ingredients:
    • In a bowl, combine minced meat, chopped onion, ginger-garlic paste, green chilies, mint leaves, and KLW Seekh Kebab Masala. Mix thoroughly.
  2. Shaping Kababs:
    • Take a portion of the mixture and shape it onto skewers, pressing firmly to hold.
  3. Grilling:
    • Preheat the grill or oven to 200°C (392°F). Place the skewers on a baking tray and brush with oil. Grill for 10-15 minutes, turning occasionally until cooked through.
  4. Garnishing and Serving:
    • Serve hot with mint chutney and sliced onions.
