Ingredients:

  • Potatoes: 2 large, peeled and diced
  • Cauliflower: 1 small head, chopped into florets
  • Green Peas: 1 cup
  • Carrots: 2 medium, peeled and diced
  • Onion: 1 large, finely chopped
  • Tomatoes: 3 large, finely chopped
  • Bell Peppers: 1 large, finely chopped (optional, for extra flavor)
  • Oil: 2 tablespoons
  • Butter: 2 tablespoons (for extra flavor, optional)
  • Ginger-Garlic Paste: 1 tablespoon
  • Green Chilies: 2, finely chopped
  • Cumin Seeds: 1 teaspoon
  • Red Chili Powder: 1 teaspoon
  • Coriander Powder: 1 teaspoon
  • Cumin Powder: 1 teaspoon
  • Garam Masala: 1 teaspoon
  • KLW Pav Bhaji Masala: 2-4 tablespoons
  • Lemon Juice: 1 tablespoon
  • Fresh Coriander Leaves: for garnish
  • Salt: to taste
  • Pav (Bread Rolls): for serving

Procedure:

  1. Preparation:
    • Boil Vegetables: In a large pot, add the diced potatoes, cauliflower florets, carrots, and green peas. Cover with water and cook until the vegetables are tender (about 15 minutes). Drain and set aside.
    • Chop Ingredients: Finely chop the onions, tomatoes, bell pepper (if using), and green chilies.
  2. Cooking the Bhaji:
    • Heat Oil & Butter: In a large pan or skillet, heat oil and butter over medium heat.
    • Add Cumin Seeds: Once the butter is melted and the oil is hot, add cumin seeds and let them sizzle.
    • Add Onions & Ginger-Garlic Paste: Add finely chopped onions and sauté until they become translucent. Stir in ginger-garlic paste and green chilies, and cook for 2-3 minutes.
  3. Making the Base:
    • Add Tomatoes & Spices: Add the chopped tomatoes and cook until they become soft and oil starts to separate. Add red chili powder, coriander powder, cumin powder, and KLW Pav Bhaji masala. Mix well and cook for another 2-3 minutes.
  4. Combine Vegetables:
    • Mash Vegetables: Add the boiled vegetables to the pan. Use a potato masher to mash the vegetables while mixing them with the spice mixture. Add a little water if needed to achieve the desired consistency.
    • Simmer: Let the bhaji simmer for 10-15 minutes, stirring occasionally. Adjust salt to taste and add lemon juice.
  5. Garnish and serve
    • Garnish with freshly chopped coriander leaves.
    • Prepare Pav: Slice the pav (bread rolls) horizontally and toast with a bit of butter on a hot griddle or pan until golden brown.
    • Serve: Serve the hot bhaji with the buttered pav. Optionally, garnish with chopped onions and lemon wedges on the side.
